I Tried the Cottage Cheese Flatbread Trend, And It Wasn’t What I Hoped For

As far as I’m concerned, there’s nothing like a piece of warm sourdough bread with a bit of butter as the perfect snack. The combination of the sweetness of the (salted) butter with the warm, chewy-yet-crusty slice of goodness is utterly delicious. Add a slice of heirloom tomato and some burrata cheese, and I’ve reached peak tastebud satisfaction. So when I saw that cottage cheese flatbread recipe making rounds and receiving raves on all the socials, I figured I’d give it a try—any bread aficionado is always up for a low-carb option.

The ingredients are simple enough. All you need is:

  • The 1 cup cottage cheese
  • The 2 eggs
  • The 1/2 tsp garlic powder
  • The 1/2 tsp onion powder
  • The 1.5 tsp Italian seasoning

To make:

  • Mix the ingredients together in a blender (I used a Nutribullet).
  • Pour into a ¼ size baking pan lined with parchment paper.
  • Bake for 35 minutes at 350° Fahrenheit.

Instagram creator @healthylittlepeach, who said the recipe grossed her out when she first heard about it, gushed about her final product: a sandwich made with the cottage cheese flatbread, Tzatziki sauce, chicken, tomatoes, arugula, and red onion for a Greek-flavored take.

With high hopes, I prepared the mixture as directed, adding a little salt and pepper (there's not a recipe that doesn't benefit from a dash of each). As it was baking, my husband commented that it smelled delicious, primarily due to the garlic and onion powder. I prepared my sandwich ingredients, including sliced roasted turkey, avocado, and those heirloom tomatoes I love so much.

When it was ready, the flatbread looked just like it did in the Instagram post—so I cut it in half and then in half again, and made my sandwich. Sadly, I was less than thrilled. The flatbread was dry and flavorless, with the texture of slightly stale saltines (minus the salt). My husband didn’t love it either, so we tossed the remaining flatbread and made a couple of sandwiches for lunch with Russian rye bread instead (we were out of sourdough).

It’s possible I needed to add more flavor, like the spicy Tzatziki sauce and peppery arugula, to spice up my sandwich (similar to what @healthylittlepeach used). It’s also likely that I needed a lot more seasoning in the flatbread itself for my palate than others do.

On Reddit, one user said they used Everything But the Bagel seasoning, which might be a better choice, but there’s still the matter of the texture that I found unappealing. Maybe a bit more cottage cheese would help? I’m not sure, but as one commenter on @healthylittlepeach's post said, “That’s an omelet.” And, in fact, it probably is. Served alongside some buttered sourdough toast, it might make your ideal lunch.
