When I first saw the recipe for "Chippy Boys" on TikTok, I knew I had to make it immediately. To me, there's nothing better than a salty snack to start or end the night, and this three-ingredient recipe totally fits the bill. To make a batch at home, you'll need thick potato chips, blue cheese, and balsamic glaze.

"Chippy Boys" are kettle-cooked potato chips that are topped with blue cheese and baked until golden-brown and toasty. They're finished with a drizzle of balsamic glaze. Recipe creator @kaelahe shared the snack on TikTok, and her video has been viewed more than 1 million times. Kaelah chose Miss Vickie's brand chips and a flavored balsamic glaze for her batch. She prefers the flavor of Gorgonzola cheese but mentions you can also use feta or goat cheese instead.

"Chippy Boys" are the perfect blend of salty chips, sweet glaze, and funky blue cheese. The "swalty" flavor combination is a bit addicting, but toasting potato chips was the real revelation for me. The almost-burnt potato chip edges might have been my favorite bites.

How to Make Chippy Boys

One of the best parts of making "Chippy Boys" is just how easy it truly is. I've made the recipe at home a few times now, and my favorite flavor combination is Kettle Brand Sea Salt potato chips, Roth Buttermilk Blue Cheese, and Alessi Balsamic Reduction. But every combination of chips, cheese, and glaze I tried was good. Just be sure to choose a sturdy chip. I wouldn't swap in regular potato chips here.

Step 1: Spread Out Your Chips

The original recipe creator crumpled parchment paper before lining a baking sheet, and this hack totally worked! No more wrestling to get the paper to fit perfectly. Next, layer on your kettle-cooked potato chips. The thicker the chips, the better.

Step 2: Add Cheese

I opted for a wedge of blue cheese and crumbled it myself onto the chips. I absolutely love blue cheese, so I went a little heavy with it. I've also tried the recipe with the crumbled blue cheese in a tub from Trader Joe's, and it worked just fine.

Step 3: Toast in the Oven

Pop the pan in the oven under the broiler on the top rack until the chips are golden brown. This is not the time to walk away. The chips can burn very quickly, as I found out the first time I made them. I still ate the slightly burned batch, and it was still delicious. You'll start to know it's ready when you can smell the cheese, about 3-5 minutes. Yes, your house is going to smell a bit funky, like warm blue cheese, and yes, it's worth it.

Step 4: Glaze

Right out of the oven, drizzle the chips with balsamic glaze. You can use flavored glazes, like raspberry balsamic or fig balsamic, or plain. I had a bottle of plain glaze in my fridge, so that's what I went with. I recommend going heavy on the glaze. It helps balance all the saltiness of the chips. Kaelah recommends tossing the chips in a bowl to evenly coat them with glaze. I skipped that step in favor of eating them right from the pan.

The Verdict on Chippy Boys

I love this recipe so much. It's the perfect snack to enjoy with a glass of white wine and a small bowl of olives. There's nothing better. I'm already looking forward to the next time I can make it again.
