In a YouTube video posted by professional chef and baker Brian Lagerstrom, "3 Ways to Make the Best Egg Salad of Your Life," he grabs a wire rack as his formative egg-cutting device. The video has more than 273,000 views. (Lagerstrom's channel boasts over 1.3 million loyal subscribers.)
How to Use the Wire Rack Egg Dicing Hack
“This is the kind of rack that you would use to keep things floating above a sheet tray in the oven,” he said in the video.
If you don’t already have a wire rack, Lagerstrom recommends investing in the tool. Even if you don’t end up using it for egg salad, it's handy for cooling your cookies or other baked goods. Lagerstrom put the wire rack on top of a medium bowl and then simply pressed his hard-boiled, shelled eggs through it. They fall directly into the bowl in perfect little chunks.
“This is the way that I used to make very large batches of egg salad in the restaurant,” Lagerstron explained. “Chopping the eggs by hand not only takes forever, but it also breaks down the eggs very unevenly, and you get chunky whites and totally crumbled yolks. It's suboptimal.”
But this hack “perfectly cuts the eggs into a clean medium dice.” In total, Lagerstrom pressed some 72 eggs through his wire rack in the video—not only would that have been way more difficult to do with a knife or dicer, but it’s also more efficient.
